If you don't like cauliflower on a daily basis you have to try this Honky Tonk Cauliflower Sandwich. All the great tastes of a hot chicken sandwich in a healthier option.

Ingredients
1 Head – Cauliflower
2 C – Buttermilk
½ C – Honky Tonk Sauce
3 C – Flour
4 T – Honky Tonk Rub
4 – Burger Buns
1 ½ C – Cole Slaw
1 C – Sliced Pickles
½ C – Honky Tonk Sauce
Directions
- Remove stalks and stems from the cauliflower while still leaving the head whole.
- Cut the cauliflower into 1” steaks. Cut away some of the core, but leave enough to hold the steaks together.
- Stir together the 2 cups of buttermilk and ½ cup of Honky Tonk sauce. Marinate the cauliflower in the buttermilk for 2 hours.
- Preheat fryer to 350 degrees.
- Stir together the flour and Honky Tonk rub.
- Take a piece of marinated cauliflower and toss it in the flower. Then place it back in the buttermilk to wet and once more into the flour for a double breading.
- Repeat the process with the remaining cauliflower.
- Fry the cauliflower for 5-7 minutes until the breading is golden brown and crispy.
- Build the sandwiches with cole slaw on the bottom bun followed by the cauliflower steaks, pickles and a drizzle of Honky Tonk Sauce.
- Enjoy!
