Ingredients

1 Lb – Ground Beef, High Quality
2 – Egg Yolks
2 t – Sherry Vinegar
½ t – Ground Mustard
¼ C – Shallot, Minced
2 T – Chopped Parsley
¼ C – Olive Oil
2 T – Capers, chopped
½ t – Buried Treasure - Truffle Butter

Directions

In a medium mixing bowl, combine the raw egg yolks, sherry vinegar, ground mustard minced shallots, capers and finely chopped parsley. Mix well with a whisk.
While whisking, slowly drizzle the olive oil into the mixture to create an emulsion.
Add cold meat to the mixture and combine by hand, using gloves.
Combine until just incorporated.
Serve with cocktail rye and enjoy!
