This jalapeno stuffed pork tenderloin will have your coming back for seconds and maybe even thirds.

Peach Jalapeno Stuffed Pork Tenderloin

Ingredients

Directions

  1. Preheat smoker or grill to 275 degrees.

  2. Trim the pork tenderloin as needed and then butterfly it. Mak a slice, about ½” from the bottom of the loin lengthwise. Continue cutting and “unroll” the pork as you cut to create a flat piece of meat.
  3. Pound out the meat to about ¾” thick.
  4. Season with BBQ General-SPG.

  5. Peel and slice the peaches and lay them out in lines on the pork, leaving about 1” between each row.
  6. Slice the jalapenos and lay them out in the gaps between the peaches.
  7. Roll the pork back up and set aside.
  8. Make a 6 X 6 bacon weave.
  9. Roll/wrap the stuffed pork in the bacon weave and secure with toothpicks on the ends.
  10. Place the roast on the smoker and cook for 1 ½ to 2 hours until the bacon weave is cooked to your liking.
  11. Baste the roast with Peach buzz and allow to smoke for an additional 15 minutes.
  12. Remove from the smoker and rest for 15 minutes before slicing and serving.
  13. Enjoy!
