Ingredients
- 6 Ear – Corn on the Cob
- ¾ - Red Bell Pepper, fine dice
- 1 – Jalapeno, fine dice

3 T – Cilantro Chopped

1 C – Mixed Cheese, Shredded

3 T – El Jefe Honey Adobo Taco Rub

1 C – Mayo
- 1 bag – Fritos (9 ¼ oz)
Directions
- Roast the corn to your liking, grilling will give the dish the best flavor. Then cool completely before making the salad.
- Cut the corn off of the cobs and add to a bowl.
- Stir in the diced bell pepper, diced jalapeno, chopped cilantro, mixed cheese, El Jefe Taco rub and mayo.
- Stir until well combined.
- Gently fold in the Fritos and serve immediately.
- Enjoy!
