Ingredients
- 6 LB – Ground Pork
- 4 LB – Ground Veal
- 10 oz – Water (distilled, cold)

156g – German Bratwurst Seasoning (portioned) (Included in Sausage Kit)

Home pack Hog Casings (Included in Sausage Kit)
Directions
- Remove the casing from the package and rinse under lukewarm water. Rinse and drain 3 to 4 times until the salt is gone and the casings soften a bit.
- Place the casings in a bowl and cover with lukewarm water to soak. Soak for at least 45 minutes before stuffing.
- If necessary, grind your pork and veal. Once through a 3/8” (10mm) plate and then once more through a 3/16” (4.5mm) plate.
- Combine the seasoning and water together with the ground meat and mix together.
- Mix the meat, like kneading bread, for 7-8 minutes until the meat becomes very tacky.
- Load the stuffer with the meat block, equipped with a ¾” or 7/8” horn attachment.
- Load the horn with your casings and stuff the sausage.
- Link the sausage to your liking and place in the fridge to rest and dry for 24 hours.
- Unlink the sausages to cook or to vackpack for freezing.
