Jalapeno Popper Chicken Dip

Ingredients

  • 8 oz – Cream Cheese

  • 4 oz – Sour Cream

  • 1 ½ C – Pulled Chicken

  • 3 – Jalapenos

  • 8 oz – Bacon

  • 3 t – Bacon Bomb

  • 1 C – Quesadilla Cheese

  • ¼ C – Mixed Cheese, shredded

Directions

  1. Preheat oven or smoker to 350 degrees. And allow the cream cheese to soften at room temp for 30 minutes.
  2. Remove the stems from the jalapenos and cut in ½ to remove the seeds. (Leave some seeds in for some extra heat!)
  3. Dice the jalapeno into small pieces.
  4. Cook the bacon either in a skillet or oven. Then chop.
  5. In a mixing bowl, combine the cream cheese, sour cream, pulled chicken, chopped bacon, quesadilla cheese, Bacon Bomb Seasoning and the diced jalapeno. Reserve 1 TB of the diced jalapeno for later as garnish.
  6. Mix well and then spread into an 8” baking dish or cast-iron pan.
  7. Place in the oven for 35-45 minutes or until heated through.
  8. Top with the mixed cheese and place back in the oven just until the cheese is melted.
  9. Garnish with diced jalapeno and serve with tortilla chips for dipping.
  10. Enjoy!
