Cold Brew Coffee Marinated Steak With Red Wine Coffee Butter

Ingredients
2 – Sirloin Steaks (7-9 oz each)

1 C - Cold Brew Coffee
2 T – Soy Sauce
2 T – Balsamic Vinegar
2 T – Olive Oil
1 T – Bier Hall Mustard
2 t – BBQ General SPG Rub

1 C – Red Wine
- 2 oz – Cold Brew Coffee
½ C – Heavy Cream
- 1 Stick – Butter, unsalted
Directions
Combine all the ingredients for the marinade in a bowl and stir until well combined.
Place the steaks into a resealable bag and pour in the marinade. Seal tightly and place in the fridge for 2-24 hours. (I found around 12 works the best)
Remove the steaks from the marinade and place on a tray. Season the steaks generously with SPG rub and set them out at room temperature to rest.
To make the butter, add the wine and coffee to a small saucepot and reduce over medium/low heat until 25% remains.
Add cream while stirring and return to a simmer. Reduce by ½.
Remove the reduction from the heat and add the stick of butter. Stir slowly but constantly until the butter is fully melted into the sauce. Set aside in a warm area.
Grill or sear the steaks to your liking.
Slice the steaks and serve with a generous amount of sauce.
