Cold Brew Coffee Marinated Steak with Red Wine Coffee Butter

Directions

1. Combine all the ingredients for the marinade in a bowl and stir until well combined.  

2. Place the steaks into a resealable bag and pour in the marinade. Seal tightly and place in the fridge for 2-24 hours. (I found around 12 works the best) 

3. Remove the steaks from the marinade and place on a tray. Season the steaks generously with SPG rub and set them out at room temperature to rest.  

4. To make the butter, add the wine and coffee to a small saucepot and reduce over medium/low heat until 25% remains.  

5. Add cream while stirring and return to a simmer. Reduce by ½.  

6. Remove the reduction from the heat and add the stick of butter. Stir slowly but constantly until the butter is fully melted into the sauce. Set aside in a warm area. 

7. Grill or sear the steaks to your liking.  

8. Slice the steaks and serve with a generous amount of sauce.
