Dry Ager Cleaning & Maintenance Guide

Your Reserve 50 or Reserve 100 Dry Ager is a precision instrument. A little routine care goes a long way toward consistent results, food safety, and the longevity of your cabinet. Here's everything you need to know about keeping it in top shape.

Before Every Use: Sanitize the Chamber

Before loading any new product into your dry ager, always perform a full sanitize cycle:

  1. Remove all racks and shelves. Wash them with warm soapy water and rinse thoroughly. Avoid abrasive pads that could scratch the stainless steel.
  2. Wipe down the interior. Use a food-safe sanitizer or a solution of 1 tablespoon white vinegar per cup of water. Wipe all interior surfaces including walls, floor, and ceiling of the chamber.
  3. Clean the door seal. The rubber gasket around the door can harbor bacteria and moisture. Wipe it down carefully, paying attention to the folds.
  4. Turn on the UV light. Run the Bacteria Defense UV light for at least 2 hours before loading your product. This is your first line of defense against unwanted bacteria and mold.
  5. Set your temperature and humidity. Let the ager stabilize at your target settings before loading. For most beef aging, that's 37°F and 75% humidity.

Weekly Check-Ins

While your product is aging, you want to minimize door openings, but a quick weekly check is smart practice:

  • Check the digital display. Confirm temperature and humidity are holding steady at your target. See our How to Read the Control Panel guide for help interpreting the readings.
  • Check the water tray. If your model has a humidity water reservoir, make sure it has water. An empty reservoir means your humidity will drop.
  • Visual inspection. Look through the glass door rather than opening it when possible. White mold on meat is normal and even desirable. Green mold should be wiped with vinegar. Black mold means discard the product.

Between Aging Cycles

When you remove finished product and before loading new product:

  1. Remove everything from the chamber: racks, hooks, drip trays, and all of it.
  2. Deep clean the interior. Wash all surfaces with warm soapy water, then follow with a food-safe sanitizer. For stubborn spots, a paste of baking soda and water works well.
  3. Clean the drain area. Check for any accumulated moisture or debris at the bottom of the chamber.
  4. Inspect the UV bulb. UV bulbs lose effectiveness over time. If the light appears dim or has been running for 6+ months continuously, consider replacing it.
  5. Check the fan. Make sure the interior circulation fan spins freely and isn't obstructed. Good airflow is critical for even aging.

Quarterly Maintenance

Every few months, take a closer look at the mechanical components:

  • Compressor area. Gently vacuum or brush dust from around the compressor and condenser coils (usually on the back or bottom of the unit). Dust buildup reduces cooling efficiency.
  • Door seal test. Close the door on a piece of paper. If you can pull the paper out easily, the seal may need attention. A tight seal is essential for maintaining humidity levels.
  • Calibrate if needed. If you notice your readings seem off, you can verify with an external thermometer and hygrometer placed inside the chamber.

What NOT to Do

  • Don't use harsh chemical cleaners inside the chamber. They can leave residue that affects flavor and food safety.
  • Don't run the ager empty for extended periods without a reason. If you're not aging anything, turn it off and clean it.
  • Don't ignore the UV light. It's not just for show. The Bacteria Defense UV system actively reduces harmful bacteria in the chamber.
  • Don't overload the chamber. Leave at least 2 inches between cuts for proper airflow. Crowding leads to uneven aging and potential spoilage.

A well-maintained dry ager will deliver consistent, safe results for years. Treat it right, and it'll reward you with incredible dry-aged beef, charcuterie, cheese, and more.
