How to Use

(For 12-1/2# Batches, Divide the Following By 2)

You will need:

  • 25# of Boneless Chicken Thighs, skin on
  • 1 1/2 cups of Water
  • 1 pkg. of "B" Seasoning
  • 2.5 # High-Temp Cheese

Or:

  • 21# of Boneless Skinless Chicken Breasts
  • 4# of Pork Fat
  • 1 1/2 cups of Water
  • 1 pkg. of "B" Seasoning
  • 2.5 # High-Temp Cheese

Suggested Procedure:

Grind regular trims through 1/8" plate. Add water and Sausage Seasoning of your choice, and mix for 3-5 minutes until meat becomes tacky. Add high-temp cheese and mix until just incorporated. Stuff into 32-35MM Hog Casings or 4" x 20" fibrous casings. If stuffed into a 4 x 20, freeze and then slice into patties. You can also make in bulk.

Salt, Spices, Sugar, Garlic Powder, Parmesan Cheese Powder (Parmesan Cheese [Pasteurized Milk Solids, Cultures, Salt and Enzymes], Whey Solids, Buttermilk Solids, Salt, Natural Flavor and Lactic Acid), Onion Powder, Maltodextrin, Torula Yeast, Natural Flavors, Dehydrated Spinach, Natural Butter Flavor, Extra Virgin Olive Oil, Citric Acid, Dextrose and less than 2% Calcium Silicate to Prevent Caking. Contains: Milk.
