Ingredients

1 Lb Chicken Breast- Cooked, Cut Into Strips

4 Eggs

1 Large Shallot- Small Dice

1/2 Cup Peanut- Chopped

1/2 Cup Green Onion- Chopped

1/2 Cup Cilantro
-
1 Cup Thai Fighter Ginger Teriyaki

1 Lime- Wedges
-
1/2 Cup Sesame or Peanut Oil

1 14 Oz Package Thai Stir Fry Rice Noodle
Directions
Follow instructions on the package of rice noodles to cook them. Once cooked, cool them under running cold water. Set aside for later.
Place a large wok over medium high heat.
Add oil to the pan and briefly sauté the shallots, for about 15-30 seconds.
Scramble the eggs and add to the wok. Stirring constantly to cook evenly and to avoid large pieces.
Add chicken and sauté until heated through.
Add Peanuts and green onion. Sauté for 2-3 minutes.
Add cooked noodles and toss to mix.
As evenly as possible, drizzle Thai Fighter into the pan and immediately toss and stir to mix well.
Once the sauce is evenly distributed, add cilantro and squeeze in 2 lime wedges. Stir briefly and plate to serve.
Garnish with cilantro, peanuts, green onion and a lime wedge.
