Trim chicken wings as needed, then season generously with Cock-A-Doodle Brew rub. Let them rest at room temperature while you preheat your smoker.
Preheat your Pro Max smoker to 250°F using the cook setting.
Place the seasoned wings directly on the smoker racks. Cook for 30 minutes.
Fill a sawdust pan halfway with smoking sawdust and lightly dampen with water.
Place the sawdust pan directly on the heating element. Adjust the smoker dampers to two-thirds closed on both the top and bottom vents.
Smoke until wings reach a 170°F internal temperature, ensuring they are fully cooked.
Transfer wings to a 400°F oven or over direct heat on a charcoal grill to crisp the skin.
