Homemade Chicken Fries

Ingredients

  • 2 LB – Ground Chicken
  • 1 – Egg
  • 1 Cup – Breadcrumbs
  • 3 TB – Buffalo Cajun Wing Rub
  • 1 Cup – Flour
  • 3 – Eggs
  • 2 Cup – Panko Breadcrumbs
  • Candied Jalapeno Wing Rub for Dipping

Directions

  1. In a large bowl, combine the ground chicken, 1 egg, 1 cup breadcrumbs and Buffalo Cajun Wing rub. Mix by hand until the ingredients are well combined and the meat is tacky.
  2. In 1 ½ oz portions, roll out the meat mixture into sticks that ar about ½” wide and 6-7” long. Place them on a parchment lined tray.
  3. Place the chicken in the freezer for 25-30 minutes to firm up. This will help with the breading process.
  4. Set up a breading station with a bowl of each, flour, beaten eggs and finally the panko breadcrumbs.
  5. Dredge a stick in the flour, coating it well and then dunk it into the beaten eggs.
  6. Roll the stick in the egg until well coated and then place it in the panko breadcrumbs.
  7. Once well breaded, place the stick back on the tray.
  8. Repeat until all the sticks are breaded.
  9. Preheat fryer to 350 degrees.
  10. Fry the sticks for 7-9 minutes until golden brown and the internal temperature reaches 170 degrees.
  11. Plate and serve with a side of Candied Jalapeno Wing sauce for dipping.
