Hot & Fast Smoked Ribs
Don't have time for a full 3-2-1 cook? These hot and fast BBQ ribs have delicious bite and flavor in just half the time. Seasoned with Notorious P.I.G. Pulled Pork Rub, these ribs go from smoker to table in about 3 hours.
Ingredients
- 2 Racks -- Pork Back Ribs
- 4 TB -- Mustard (binder)
- 1/2 Cup -- Notorious P.I.G. Rub
- Sauce if desired
Directions
- Preheat smoker to 180 degrees on the smoke setting.
- Remove the ribs from their packaging. Remove the membrane from the underside of the ribs.
- Slather the ribs on all sides with mustard to act as a binder.
- Season the ribs generously with Notorious P.I.G.
- Fill a pan 1/2 full with sawdust and dampen with water.
- Place the sawdust pan on the heating element. Set dampers to 2/3 closed.
- Once the smokehouse comes back to 180 degrees, place the ribs in the smoker.
- Smoke for one hour.
- Carefully remove the sawdust pan from the smoker and extinguish the sawdust if needed.
- Change the setting on the smoker to cook and increase the temperature to 300 degrees. Fully close the dampers.
- Cook the ribs until your desired texture, about 2-3 hours.
- Sauce for the last 10 minutes of cooking if desired.
- Rest the ribs for 10 minutes before serving.
