A beef and cheddar made fresh at home! Your favorite roast beef sandwich made right at home! It doesn't get better then this!

Ingredients
3 LB – Eye of Round Roast
½ C – Prime Time Butcher’s Blend
6 – Onion Buns
1 C – Memphis King Tangy BBQ Sauce

2 T – Butter
2 T – Flour
1 C – Heavy Cream
1 ¾ C – Cheddar Cheese, Shredded
Salt and Pepper to taste
Directions
- Preheat oven to 500 degrees.
- Trim excess fat and silver skin from the beef and then season the entire roast generously with Prime Time Butcher’s Blend.
- Allow to rest at room temperature for 30 minutes.
- Place the seasoned roast on a rack lined tray and then place it in the oven for 30 minutes.
- Turn the oven temperature down to 300 degrees and roast for an additional 40 to 50 minutes until the internal temperature reaches 135 degrees.
- Remove the roast from the oven and rest for at least 30 minutes.
- While the roast is resting, make the cheese sauce.
- Melt the butter in a saucepan. Add flour, stir and cook over medium heat for 3 minutes.
- Slowly, while stirring, add the cream and bring to a simmer to thicken.
- Stir in shredded cheddar cheese and stir until melted and smooth.
- Season with salt and pepper to taste.
- Using a sharp knife, slice the roast beef as thin as possible.
- Toast the onion buns if desired.
- Build the sandwiches. Drizzle a few tablespoons of Memphis King and then add about 6 ounces of sliced beef.
- Drizzle with cheese sauce and then place the top bun.
- Serve with extra napkins!
