Sausage Making Recipe - Bacon Cheeseburger Bratwurst

Instructions:

For 25 Lb. Meat Batch

25 Lbs. Pork Trimmings
1 Package - B Unit           No. 680 Bacon Cheeseburger Bratwurst Seasoning
3.75 Lbs. Smoked Bacon Ends & Pieces, Ground
1.25 Lbs. Chopped Onion
2.5 Lbs. High-Temp Cheddar Cheese
.75 Lbs. Potato Starch
1.66 Lbs. Distilled Water
1 Package 32-35MM Natural Hog Casings

Instructions:

1) Grind pork through 5/32" plate, twice.
2) Add water, seasoning & potato starch; mix well.
3)Add ground bacon, onion and cheese; mix until thoroughly blended.
4) Stuff into 32-35mm hog casings.

5) Store and refrigerate overnight before grilling or cooking.

Tip: Seal in vacuum bags for storage in freezer.
