Ingredients
1 Bag – Tater tots (2 Lbs)
1 C – Cheddar Cheese, Shredded
2 T – Sour Cream
1 C – Steak, cooked and diced
2 C – Heavy cream
2 C – Cheddar Cheese, Shredded

¼ C – El Jefe Taco Adobo Honey Taco Seasoning & Rub
2 – Roma Tomatoes
½ - Red Onion
1 – Jalapeno
¼ Bunch – Cilantro
1 t – Lime Juice
Cheese Sauce
Pico De Gallo
Directions
Make the Pico De Gallo by small dicing the tomatoes, red onion, jalapeno and chopping the cilantro. Combine these all together in a bowl with the lime juice and mix until well combined. Set aside.
To make the cheese sauce, bring the heavy cream to a simmer in a medium sized sauce pot. 1/3 at a time, add the 2 cups of shredded cheddar, stirring constantly until well combined and smooth. Season with the ¼ cup of El Jefe Taco Seasoning.
Fry or bake the tater tots per the directions on the package.
Dump the tots into a medium sized cast iron pan.
Top the tots with shredded cheese, cheese sauce, cooked steak and then Pico.
Finish with a dollop of sour cream and a lime wedge for garnish.
