Ingredients
- 3 LB – Chicken wings, drummies and flats

2 C – Buttermilk

3 C – Flour
-
3 T – Good Fella
-
1 ½ C – Marinara Sauce

1 ½ C – Mozzarella Cheese, shredded
Directions
- Breakdown the wings if necessary and place them in a bowl with the buttermilk. Marinate in the fridge for 4 hours. (up to 24)
- Preheat fryer to 325 degrees.
- Combine flour and Good Fella in a bowl and stir until well combined.
- Take a wing from the buttermilk and allow excess buttermilk to drip off for a few seconds before putting it into the flour.
- Dredge the wing well and then dunk it back in the buttermilk.
- After the buttermilk, dredge it one more time in the flour for a double breading.
- Fry the wings in batches for 8-12 minutes until the breading is crispy brown and the internal temperature of the wings reaches 170 degrees.
- Preheat oven to 425 degrees.
- Place the wings on a sheet tray and spoon the marinara sauce onto the wings individually.
- Top the sauce with a pinch of mozzarella cheese.
- Place the wings in the oven for 5-6 minutes until the cheese melts and starts to brown.
- Finish the wings with a few extra cracks of Good Fella and enjoy!
