Al Capone Roast Italian-Stuffed Pork Loin
Rumor has it that this classic stuffed Wisconsin pork roast recipe was Al Capone's favorite dish when he was hiding out in the Northwoods. Like any notorious gangster, Al Capone loved good food. And stuffed with cheese, sausage, olives and prosciutto...what's not to love?
You can typically find a Capone roast at any butcher shop in Wisconsin, but making one at home is a fun cooking project worthy of the time and effort. In this recipe, we used boneless pork loin, but you can also find recipes using boneless pork shoulder, flank steak or a combination of both.

Ingredients
- 3 ½ LB – Boneless Pork Loin

4 T – Good Fella
- 2 OZ – Prosciutto,
- 3 OZ – Hard Salami, thin sliced
- 3 OZ – Pepperoni, thin sliced
- 8 oz – Provolone Cheese, Sliced
- 3 OZ – Olives, Chopped

¾ C – Parmesan Cheese, Grated
- 8 OZ – Mushrooms

3 T – Butter
-
3 T – Garlic, Chopped
Directions
- Trim excess fat from the pork loin if necessary.
- Use a sharp knife to cut and butterfly the roast, unrolling it away from the knife as you cut.
- Once the roast is open, season generously with Good Fella.
- Evenly lay out the 3 sliced meats on the pork, followed by the sliced provolone.
- Sprinkle on the chopped olives and grated parmesan.
- Roughly chop the mushrooms and then sauté them in butter for 8 minutes. Add garlic for the last 2 minutes of cooking.
- Evenly spread the mushrooms on top.
- Roll the roast back up as tightly as possible. Truss the roast with butcher’s twine and then season the outside generously with Good Fella.
- Allow to rest at room temperature while you preheat the smoker to 350 degrees.
- Place the roast on a rack lined tray.
- Place one the smoker and cook for 1 ½ - 2 hours until the internal temperature of the roast reaches 140 degrees.
- Rest for 20 minutes before slicing.
