Ingredients
- 3 LB – Potatoes

1 T – Kosher Salt
- 1 Stick – Butter
-
1 ½ C – Heavy Cream

2 T – King Shallot
Directions
- Peel the potatoes and cut them into even sized pieces, about 2” cubes.
- Place them in a stock pot and fill with cold water until the potatoes are covered by about 1” of water. Add kosher salt
- Place on high heat until the water boils and then reduce heat to medium high to maintain the boil without overflowing.
- Heat the cream, butter and King Shallot together in a saucepot stirring occasionally until the butter is melted and the cream boil. Remove from heat immediately.
- Once the potatoes are fork tender, strain and place in a bowl, or back in the stock pot for mashing.
- Using a hand mixed or hand masher, mash the potatoes until they are to your liking.
- Add cream mixture to the potatoes and stir until well combined.
- Preheat smoker to 350 degrees.
- Spread the potatoes on a cedar plank. (You can make these a day ahead of time. Just place the planked potatoes in the fridge until you’re ready to heat them up)
- Place the plank on the smoker and cook for 15 minutes. (if cold from the fridge, smoke for 30-35 minutes until hot)
- Serve and enjoy!
