Trim the flat iron steak as needed and season generously on all sides with PS Seasoning Butter Blizzard Seasoning Blend. Set aside at room temperature while you prepare the griddle.
Preheat a griddle or flat-top to medium-high heat.
Sprinkle about ¼ cup grated Parmesan cheese directly onto the hot griddle, shaping it roughly the size of a slice of bread.
Lightly season the Parmesan with Butter Blizzard, then place a slice of sandwich bread directly onto the melting cheese.
- Toast until the cheese forms a golden, crispy crust, then flip and toast the other side. Repeat with the remaining bread slices. Set aside.
Grill or sear the seasoned steak on the hot griddle, cooking to your desired internal temperature.
Remove the steak from the heat and rest for 5 minutes, then slice thinly against the grain.
- To assemble the sandwich, place the sliced steak on one piece of Parmesan-crusted bread with the cheese crust facing outward.
Top the steak with slices of garlic and herb cheese and melt using a culinary torch or under the broiler until just softened.
