Ingredients

8-10 LB – Crown Roast
Ask your local butcher to cut and tie

1 Jar – Buried Treasure Truffle Butter
- 1 Pkg – Stuffing Mix

4 T - Butter
- 1 LB – Mushrooms
- 1 – Onion
- 2 Stalk – Celery
- 2 Sprig – Thyme, fresh

2 C – Chicken Stock
Directions
- Preheat smoker to 350 degrees.
- Trim the roast if needed and French the bones to remove the meat in between them.
- Wrap the roast up in a circle with the tops of the bones pointing out to resemble a crown.
- Season the whole roast generously with Buried Treasure. Allow to rest at room temperature.
- Chop the onion, celery and mushrooms.
- In a sauce pot, sauté the onion and celery for 2-3 minutes in butter. Then add the mushrooms and fresh thyme and cook for 4 minutes.
- Remove the sprigs of thyme and then add chicken stock and bring to a boil.
- Pour the stuffing mix into a large bowl and then pour in the vegetables and broth.
- Stir until well combined.
- Place the crown roast on a rack lined tray.
- Fill the center of the roast with stuffing.
- Place the roast on the smoker with a temperature probe in the thickest part of the roast.
- Cook for 2-3 hours or until the internal temperature reached 138 degrees.
- Allow to rest for 30 minutes before carving.
