Buried Treasure Crown Roast

Directions

1. Preheat smoker to 350 degrees.
2. Trim the roast if needed and French the bones to remove the meat in between them.
3. Wrap the roast up in a circle with the tops of the bones pointing out to resemble a crown.
4. Season the whole roast generously with Buried Treasure. Allow to rest at room temperature.
5. Chop the onion, celery and mushrooms.
6. In a sauce pot, sauté the onion and celery for 2-3 minutes in butter. Then add the mushrooms and fresh thyme and cook for 4 minutes.
7. Remove the sprigs of thyme and then add chicken stock and bring to a boil.
8. Pour the stuffing mix into a large bowl and then pour in the vegetables and broth.
9. Stir until well combined.
10. Place the crown roast on a rack lined tray.
11. Fill the center of the roast with stuffing.
12. Place the roast on the smoker with a temperature probe in the thickest part of the roast.
13. Cook for 2-3 hours or until the internal temperature reached 138 degrees.
14. Allow to rest for 30 minutes before carving.
