With Thanksgiving coming to an end everyone is stuck with all the leftovers! Mix it up a little and try creating a fun dip with your potato leftovers!

Ingredients

2 C – Mashed Potatoes, leftover
8 oz – Bacon
½ C – Chives, chopped
½ C – Chicken Stock
½ C – Sour Cream
1 T – Bacon Bomb
1 ½ C – Cheddar Cheese, shredded

Directions

Chop the bacon and cook over medium high heat until the bacon is rendered and crispy. Drain.
Preheat oven to 375 degrees.
In a mixing bowl, combine the leftover potatoes, cooked bacon, chives, chicken stock, sour cream and bacon bomb. Stir until well combined.
Spread the potato mixture into a cast iron pan and top it with the shredded cheese.
Place in the oven for 20-25 minutes until the potatoes are heated through and the cheese is melted.
Serve with pork rinds for dipping.
