BBQ Pork Enchiladas, the perfect way to turn leftover pulled pork into a whole new meal. The perfect combination for a Mexican BBQ Dish!
Ingredients
- 1 LB – Pulled Pork
- 1 – Red Pepper, small dice
- ½ - Red Onion, small dice

1 C – Corn

1 C – Black Beans, well rinsed

2 C – Memphis King Tangy BBQ Sauce
- 10-12 – Flour Tortillas

2 C – Mixed Cheese, Shredded

2 T – Cilantro, chopped
Directions
- Preheat oven to 350 degrees
- Shred the pulled pork. Place in a bowl and add the red pepper, red onion, corn, black beans, 1 cup of mixed cheese and 1 cup of Memphis King.
- Mix until well combined.
- Make the enchiladas. Add ½ cup of the pork mixture to the center of a tortilla. Spread on the tortilla to reach each side. Roll up the tortilla, leaving the ends open.
- Place the enchiladas in a lightly greased baking dish.
- Drizzle the enchilada with the remaining 1 cup of BBQ sauce and the top with the remaining 1 cup of mixed cheese.
- Place in the oven to bake for 40-45 minutes until the enchiladas are heated through and the cheese is melted.
- Allow to cool for 5 minutes before garnishing with chopped cilantro and serving
