Ingredients
10 lbs – Pork butt or trim
146 grams - #260 Blue Ribbon Italian Sausage Seasoning
1 LB – High Temp Mozzarella Cheese
8 oz – Diced Pepperoni
4 oz – Diced Black Olives
4 oz – Diced Onion
4 oz – Diced Green Pepper
4 oz – Diced Sundried Tomatoes
1 ½ C – Distilled Water

Directions
- Freeze grinder parts for 2 hours prior to grinding.
- Cut the pork into grinder sized pieces and place in the freezer for 30-45 minutes before grinding.
- Soak casings according to directions on the packaging.
- Grind the meat twice. Once through a 3/8” (10mm) plate and then once through a 3/16” (4.5mm).
- Sprinkle the seasoning into the ground meatblock along with the water.
- Mix by hand until the seasoning is well distributed and the meat becomes slightly tacky.
- Add the pepperoni, black olives, onion, sundried tomatoes, and green pepper. Mix gently until incorporated.
- Finally add the high temp mozzarella cheese and mix until just incorporated.
- Prepare the stuffer with a ¾” horn and fill the hopper with the meatblock.
- Stuff all the sausage into the casings.
- Link every 6” and poke to eliminate air pockets as needed.
- You can grill these up right away over indirect heat until they reach an internal temperature of 160 degrees. I like to let them set overnight if I can resist.
- Enjoy on a toasted bun with a side of warm pizza sauce for dipping.
