Ingredients
- 1 LB – Sirloin Steak

3 T – Red Wine Vinegar

¼ C – El Jefe Honey Adobo Taco Rub

½ C – Oil
-
1 T – Bier Hall Mustard
- 2 Clove - Garlic

¼ C – Red Wine Vinegar
-
½ C – El Jefe Sauce
-
1 C – Vegetable Oil
- 1 – Red Onion
- 2 – Green Bell Pepper
- 3 – XL Flour Tortillas

3 C – Quesadilla Cheese
-
¼ C – Sour Cream
Directions
- Combine 3 TB red wine vinegar, El jefe rub and ½ cup oil in a bowl and stir until well mixed.
- Place the steaks in a bag and pour in the marinade. Massage it into the meat and set in the fridge for 4 hours.
- Julienne the peppers and onions and sauté them in oil over medium/high heat until just softened. Set aside.
- Make the vinaigrette by blending the mustard, garlic, red wine vinegar and el jefe sauce until smooth. While blending, slowly drizzle in the oil to emulsify.
- Sear off the steaks to your desired temperature. Allow to rest before slicing.
- Build the quesadillas by spreading ½ cup of cheese over ½ of a tortilla. Then layer on sliced steak, sauteed vegetables and then another ½ cup of cheese.
- Fold over the tortilla.
- Sear off the quesadillas on both sides until heated through and golden brown.
- Mix sour cream with the el jefe vinaigrette and serve for dipping.
