Smoked Turkey Jambalaya
Leftovers never tasted so good. This one-pot smokey jambalaya is filled with leftover smoked turkey, ham, and sausage with a kick of spices from our Bad Juju Cajun Blend.
Smoked Turkey Jambalaya

| 2 T | Butter |
| 1 T | Olive Oil |
| 1 | Yellow Onion, chopped |
| 1 | Green Bell Pepper, chopped |
| 2 | Celery Ribs, chopped |
| 3 | Garlic Cloves, minced |
| 2 T | Bad Juju Cajun Blend |
| 2 tsp | Smoked Paprika |
| 28 oz. | Crushed Tomatoes |
| 2 cups | Smoked Turkey, diced |
| 2 | Smoked Polish or Andouille Sausages, thinly sliced |
| 1 cup | Smoked Ham (optional) |
| 3 3/4 cups | Chicken or Turkey Stock |
| 3/4 cup | Water |
| 2 cups | Long Grain Rice |
| To Taste | Hot Sauce |
Instructions:
- Heat butter and olive oil in a large pot over medium heat. Add onion, bell peppers, and celery. Cook for 3 to 4 minutes, then add the garlic and cook an additional 2 minutes, or until fragrant.
- Add smoked paprika, Bad Juju, crushed tomatoes, smoked turkey and ham, sausage, stock and water. Bring to a boil, then stir in rice.
- Reduce heat to low simmer and cover pot. Cook for 20 minutes, then remove from heat uncover, and stir in parsley. Serve hot.
