Leftovers never tasted so good. This one-pot smokey jambalaya is filled with leftover smoked turkey, ham, and sausage with a kick of spices from our Bad Juju Cajun Blend.
Smoked Turkey Jambalaya

|1 T||Olive Oil|
|1||Yellow Onion, chopped|
|1||Green Bell Pepper, chopped|
|2||Celery Ribs, chopped|
|3||Garlic Cloves, minced|
|2 T||Bad Juju Cajun Blend|
|2 tsp||Smoked Paprika|
|28 oz.||Crushed Tomatoes|
|2 cups||Smoked Turkey, diced|
|2||Smoked Polish or Andouille Sausages, thinly sliced|
|1 cup||Smoked Ham (optional)|
|3 3/4 cups||Chicken or Turkey Stock|
|2 cups||Long Grain Rice|
|To Taste||Hot Sauce|
- Heat butter and olive oil in a large pot over medium heat. Add onion, bell peppers, and celery. Cook for 3 to 4 minutes, then add the garlic and cook an additional 2 minutes, or until fragrant.
- Add smoked paprika, Bad Juju, crushed tomatoes, smoked turkey and ham, sausage, stock and water. Bring to a boil, then stir in rice.
- Reduce heat to low simmer and cover pot. Cook for 20 minutes, then remove from heat uncover, and stir in parsley. Serve hot.
