Ingredients

4 Large Yellow Onions

3 T Olive Oil

3 T Butter
-
3 T Prime Time Buttery Beef Blend

1/2 C Red Wine
-
3 C Beef Broth
-
3 C Chicken Broth

Easy Homemade Croutons (See Recipe)

Gruyere Cheese
Directions
Preheat smoker to 225 degrees.
Cut the onions in half through the root. Place on the smoker and smoker for 45-60 minutes. The onions should be just barely tender, and the peels will darken a bit.
Peel and julienne the onion and place in a medium sized rondo with the oil and butter.
Cook the onions over medium low, stirring occasionally until the onions are very tender and partially caramelized.
Add Prime Time and red wine to deglaze. Cook for 5 minutes.
Add both broths and bring to a boil.
Reduce heat to simmer for 45 minutes. Adjust seasoning as needed.
Serve in a croc topped with croutons and a slice of cheese. Place under the broiler for 45-60 seconds or until the cheese is melted and slightly browned.
