Pulled Pork Breakfast Burrito

|2 1/2 cups||Notorious P.I.G. Pulled Pork|
|15 1/2 oz.||Pinto Beans, canned & drained|
|1 cup||Bacon, diced|
|1||Yellow Onion, diced|
Poblano Pepper, roasted & chopped
|2 T||Cilantro, chopped|
|1 T||Parsley, chopped|
|1/2 T||Chives, chopped|
|1 doz.||Eggs, beaten|
Large Flour Tortillas
|1 1/2 cups||
Cheddar Cheese, shredded
|Honky Tonk Hot Sauce|
- Heat a skillet over medium heat. Add bacon and sauté for 5 minutes, until bacon begins to brown. Add onion to the skillet and sauté for 2 minutes, until onions are translucent and bacon is crisp. Stir in pulled pork, pinto beans, and roasted poblano peppers. Cook for another 2 minutes, then stir in fresh herbs. Remove from heat.
- Melt butter in a non-stick skillet, over medium heat. Scramble the eggs, then remove from heat and set aside.
- Assemble burritos: Place flour tortillas on a flat surface. Sprinkle with half of the shredded cheese, then divide scrambled eggs and pulled pork filling over the cheese, sprinkle with remaining cheese, then roll. Serve warm.
