Ingredients
- 9-11 LB – Pork Butt

2 TB – Bier Hall Mustard

1 Cup – Notorious P.I.G. Pulled Pork Rub

2 Cup – Notorious P.I.G. BBQ Sauce
- 3 Cup – Mac N Cheese
- 2 Cup – Baked Beans
- Flour Tortillas
- Pickled Red Onion
Directions
Preheat your smoker to 250°F.
Pat the pork butt dry with paper towels and score the fat cap in a crosshatch pattern. This helps render the fat during smoking and allows seasoning to penetrate deeper into the meat.
Coat the entire pork butt with Bier Hall Mustard, then season generously on all sides with Notorious P.I.G. Pulled Pork Rub.
Place the pork butt directly on the smoker grates and smoke for 3 to 5 hours. Continue smoking until the internal temperature reaches 165°F and a bark has formed on the outside of the BBQ pork shoulder.
Wrap the pork butt tightly in butcher paper and return it to the smoker.
- Cook for an additional 8 to 12 hours, or until the internal temperature reaches 204°F and the meat is tender enough to shred easily.
Remove the smoked pork butt from the smoker and allow it to rest in an empty cooler for 1 hour. Alternatively, rest it on a tray in an oven that is turned off.
While the pork is resting, prepare the BBQ taco toppings. Get your mac and cheese, baked beans, and pickled red onions ready for assembly.
Shred the smoked pork using two forks or meat claws, then drizzle with 1 cup of Notorious P.I.G. BBQ sauce.
- Stir to evenly coat the pulled pork with sauce for rich BBQ flavor in every bite.
- Heat each tortilla for a few seconds over a grill or open flame until soft and slightly charred.
Assemble the pulled pork tacos.
- Add a generous portion of pulled pork to each tortilla, then top with a spoonful of baked beans and creamy mac and cheese.
Finish each taco with a drizzle of Notorious P.I.G. BBQ sauce and garnish with pickled red onions.
