Ingredients

3 LB – Pork Belly

3 TB – Bier Hall Mustard

¾ Cup – Notorious P.I.G. Pulled Pork Rub

4 TB – Butter
-
¾ Cup – Notorious P.I.G. BBQ Sauce
Directions
Set smoker to 250 degrees.
Cut pork belly into large pieces (3” cubes) and slather the pieces with Bier Hall mustard.
Season generously with Notorious P.I.G. Rub.
Arrange the seasoned pork belly on a wire rack and place in the smoker for 3 hours.
Remove the pork belly from the wire rack and place in a foil lined baking dish, or a disposable aluminum pan.
Add the butter and Notorious P.I.G. BBQ Sauce to the pan and cover with foil.
Return to the smoker for another 1 to 1 ½ hours or until the meat reaches 200 degrees.
Remove from the smoker and stir the sauce until smooth.
Rest the meat for 15 minutes.
