Preheat your Pro Classic or Pro Max smoker, grill or oven to 225°F.
Remove the membrane from the back of the ribs to help them cook more evenly and absorb more flavor. Rub a generous layer of Bier Hall Mustard all over the ribs to act as a binder.
Season the ribs generously on both sides with Notorious P.I.G Rub, pressing it in to ensure it adheres well.
Place the ribs directly on the smoker grates and smoke for 3 hours. Alternately, place on the grill or in the oven. Begin checking at the 2-hour mark. Once the rub has set and formed a crust on the surface, remove the ribs for the next step.
Tear off a large sheet of heavy-duty aluminum foil and double it up. Place ¼ of the butter and ¼ of your Notorious P.I.G. BBQ sauce directly on the foil. Lay the ribs meat-side down on top. Spread another ¼ of the butter and ¼ of the BBQ sauce on the bone-side of the ribs.
- Wrap the foil tightly around the ribs to seal in the moisture, but be careful not to tear the foil.
Return the wrapped ribs to the smoker, grill or oven and cook for 2 more hours.
Carefully remove the ribs from the foil. Baste them all over with more Notorious P.I.G BBQ sauce, then place them back in the smoker, grill or oven, unwrapped, for 1 final hour to set the glaze.
Remove the ribs and let them rest for 10–15 minutes before slicing. Enjoy!
