Ingredients
- 1 Pkg – Brats (raw)
- 10 Slice – Bacon (thin)
- 8 oz – Cheese Curds
- 10 Slices – Bacon

2 ½ C – Cheddar Cheese, Shredded
- 4 oz – Cream Cheese
- 1 Jar – Pimentos, drained (7oz)

3 T – Rodeo Rub + more for topical seasoning

½ C – Blue Ribbon BBQ Sauce
- 5 – Brat Buns
Directions
- Pre heat grill to 250 degrees.
- Combine the shredded cheese, pimentos, cream cheese and 3 TB of Rodeo rub in a bowl and mix until well combined.
- Using a sharp knife, slice into the brats from end to end, about ¾” deep. Then spread them open.
- Stuff the brats with 3 TB of the pimento cheese, then reform the brat. (it’s ok if it doesn’t fully close back up)
- Wrap each brat in two slices of bacon. (You can use a toothpick to help hold them together if needed. Just make sure to remove them before serving)
- Season the outside of the wrapped brats with more Rodeo Rub
- Place the brats on the grill and cook for 45-60 minutes, or until the internal temperature reaches 150 degrees.
- Increase the heat to 400 degrees to crisp up the bacon and cook for 10-15 minutes or until desired crispiness.
- Baste the brats with Blue Ribbon BBQ Sauce and sear for 2-3 minutes each side to caramelize.
- Serve in the brat buns and enjoy!
