It is not raining but you will want to grab an umbrella. A Smoked Inside-Out Chicken Umbrella will do! We flipped the meat inside out and drenched these drumsticks in a bourbon chipotle honey BBQ sauce. Bring on the rain!
Ingredients

4 1/2 Lb Chicken Drumsticks

1/2 C Bee Sting Hot Honey Chipotle BBQ Rub

4 T Butter

1 C Bourbon Barrel Whiskey BBQ Sauce
Directions
Make a cut all the way around the bone, about 1” down from the skinny end of the drumstick. Pull or cut the remaining skin from the bone tip to expose the bone.
Remove the skin from the meat of the drumstick.
Push the meat down the leg until it folds over the end of the bone. (Make a little cut in the meat parallel to the bone to make it easier to fold over.)
Cut away as many tendons as possible.
Season the meat with Bee Sting Hot Honey rub.
Using butcher’s twine, tie the meat so it doesn’t roll back onto the bone during smoking.
Preheat smoker to 275 degrees.
Place the seasoned umbrellas on the smoker for about 45-60 minutes or until the internal temperature of the chicken reaches 165 degrees.
In a saucepan over medium/low heat. Melt the butter and combine with the Bourbon Barrel BBQ Sauce.
Generously baste the chicken in the sauce and return to the smoker for 15 minutes until the sauce tacks onto the meat.
Allow to rest for 10 minutes before serving.
