Ingredients
- 2 Racks – Pork Back Ribs

1 ½ C – White Vinegar

1 ½ C – Water
-
½ C - Sugar
- 1 – Spicy Dill Pickle Wing Rub
-
2 T – Black Peppercorns
-
3 C - Ice
-
4 T – Big Dill Mustard
-
½ C – Sliced Pickles
Directions
- Combine the vinegar, water, sugar ¼ Cup Spicy Dill Pickle Wing Rub and black peppercorns in a saucepan. Bring to a boil over medium heat until the salts and sugars dissolve.
- Pour the brine into a pitcher and mix with the ice to cool the brine rapidly.
- Set aside until fully cooled.
- Remove the membrane from the back of the ribs and cut them into ½ racks.
- Place the ribs in a brine bag and pour in the cold brine.
- Brine for at least 4 hours, up to 24.
- Preheat smoker to 250 degrees
- Remove the ribs from the brine and pat them dry with a paper towel.
- Slather the ribs with Big Dill Mustard as a binder.
- Season the ribs generously with Spicy Dill Pickle Wing Rub.
- Place the ribs on the smoker for 5-6 hours until tender. (you can wrap after 3 hours with some added butter too!)
- Top the ribs with the sliced pickles and place back on the smoker for 10-15 minutes.
- Rest the ribs for 10 minutes and enjoy!
