Cornish Game Hens
Change up your poultry game with these grilled honey ale Cornish Game Hens. Cornish hens are a smaller variety of chicken that typically range from 1 – 2 lbs each. Similar in taste, these small birds are easy to serve and will eliminate any fighting over who gets the breast or legs.
Note: For faster grilling time, cut the game hens in half and grill for 25 to 30 minutes, until 165 F internal temperature is reached.

Olive Oil |
1/4 cup | Cock-a-Doodle Brew Rub |
4 | Garlic Cloves, smashed |
1 | Leek, thickly sliced |
3 | Carrots, chopped |
2 | Celery Ribs, sliced |
1 | Parsnip, chopped |
6 | Baby Red Potatoes, halved |
1 | Sage Sprig |
1/2 cup | Chicken Stock |
2 T | Butter, melted |
Instructions:
- Place game hens in a 13x9" pan. Brush game hens with olive oil, then season with Cock-A-Doodle Brew, including inside the cavity. Refrigerate for at least 2 hours, or overnight.
- Preheat the grill to 325 F.
- Combine garlic, vegetables, and sage and set in cast iron, or grill safe pan. Place the seasoned hens on top, then transfer to the grill and cook for 60 to 70 minutes, rotating halfway. At the 30 minute marker, combine chicken stock and melted butter, then pour over each hen.
- Remove from the grill and allow 10 minutes of resting time before enjoying warm.
