These bacon jam and brie bites layer rich, smoky flavor with creamy cheese and a crisp base. The homemade bacon jam is made with tomatoes, shallots, and Cherry Bomb Sweet Heat BBQ Rub, adding sweet heat and depth to the mix. Served warm over toasted crostini and topped with sliced brie, these bites deliver a perfect balance of sweet, salty, and savory.

Cherry Bomb Bacon Jam & Brie Bites

Ingredients

  • 2 LB – Bacon

  • 1 – Shallot

  • 4 – Tomatoes

  • 2 TB – Cherry Bomb Chipotle BBQ Rub

  • 1 – Baguette

  • 2 TB – Olive Oil

  • 1 Wheel - Brie

Directions

  1. Roughly chop the bacon and place it in a large skillet.
  2. Cook over medium heat, stirring often, until the bacon is crispy.

  3. Drain the bacon, reserving the rendered bacon fat.
  4. Finely dice the shallot.
  5. In the same skillet, sauté the shallot in 2 tablespoons of reserved bacon fat over medium heat for about 4 minutes, stirring occasionally.

  6. Dice the tomatoes.
  7. Add the tomatoes to the shallots and cook for 5 minutes, stirring occasionally.

  8. Return the cooked bacon to the skillet and season with Cherry Bomb BBQ Rub.

  9. Preheat the oven to 375°F.

  10. Slice the baguette into ½-inch pieces and arrange them on a sheet tray.

  11. Drizzle the crostini with olive oil and bake for 8 minutes, until lightly crisp.

  12. Slice the brie and place enough on each crostini to cover most of the bread.
  13. Add 1 tablespoon of bacon jam to each crostini, then return to the oven for 3–4 minutes to warm.

  14. Serve immediately and enjoy your brie and bacon jam crostini appetizer.
