Ingredients

2 LB – Bacon

1 – Shallot

4 – Tomatoes

2 TB – Cherry Bomb Chipotle BBQ Rub

1 – Baguette

2 TB – Olive Oil

1 Wheel - Brie
Directions
- Roughly chop the bacon and place it in a large skillet.
Cook over medium heat, stirring often, until the bacon is crispy.
- Drain the bacon, reserving the rendered bacon fat.
- Finely dice the shallot.
In the same skillet, sauté the shallot in 2 tablespoons of reserved bacon fat over medium heat for about 4 minutes, stirring occasionally.
- Dice the tomatoes.
Add the tomatoes to the shallots and cook for 5 minutes, stirring occasionally.
Return the cooked bacon to the skillet and season with Cherry Bomb BBQ Rub.
Preheat the oven to 375°F.
Slice the baguette into ½-inch pieces and arrange them on a sheet tray.
Drizzle the crostini with olive oil and bake for 8 minutes, until lightly crisp.
- Slice the brie and place enough on each crostini to cover most of the bread.
Add 1 tablespoon of bacon jam to each crostini, then return to the oven for 3–4 minutes to warm.
Serve immediately and enjoy your brie and bacon jam crostini appetizer.
