Ingredients
- 2 LB – Ground Pork

7 TB - #123 Pancake Breakfast Sausage Seasoning
- 10 – Eggs
- 3 TB – Heavy Cream
- 6 oz – Cheddar Cheese, Shredded
- 16 Slice – Bacon, thick cut

1/3 Cup – Maple Bourbon Wing Sauce
- 8 – Brioche Burger Buns
- 2 TB - Butter
- 6 – Eggs
- ¼ Cup – Heavy Cream

3 TB – Apple Pie Cinnamon Rub
Brioche French Toast
Directions
- Preheat grill or smoker to 275 degrees
- Mix the pork and sausage seasoning together until the seasoning is well incorporated and the meat becomes tacky.
- Line a ¼ sheet tray with plastic wrap.
- Press the meat down into the pan making an even layer.
- Whisk together 10 eggs and heavy cream.
- Scramble the eggs in a skillet over medium/high heat.
- Evenly spread the eggs on top of the sausage, leaving 1” around the border of the meat.
- Top with shredded cheese.
- Roll the sausage over the top of the eggs and cheese and seal. Peel away the plastic wrap.
- Make a square bacon weave, 8 slices wide.
- Place the sausage on one edge of the weave and roll to fully wrap.
- Close the ends of the weave and hold together with toothpicks.
- Place the fatty on a rack lined tray and smoke for 2 hours or until you reach an internal temperature of 155 degrees.
- Baste the breakfast fatty with the Maple Bourbon Wing Sauce.
- Turn the heat up to 400 and cook for 5-10 minutes to crisp the bacon.
- Allow the fatty to rest for 10 minutes before slicing.
- Combine the eggs, cream, Apple Pie in a bowl and whisk until smooth.
- Heat skillet to medium/ high and melt the butter.
- Dunk the brioche buns in the French toast batter and then toast in the skillet, about 4 minutes each side.
- Build your sandwiches.
- Place a slice or two of the breakfast fatty on a brioche bun and drizzle with maple syrup.
- Enjoy!
