This trend has taken the world by storm over the past week on TikTok. Say goodbye to Charcuterie boards and say hello to Butter Boards! With roasted bone marrow blended with luscious butter and topped with thinly sliced steak, this butter board is a carnivore's dream!
Ingredients
- 6 – Cow Bones, split

2 t – BBQ General SPG Rub
- 8 oz – Butter
- 4 oz – Steak, sirloin
- 16 Clove – Garlic

1 t – Olive Oil
-
2 t – King Shallot
-
3 T– Chili oil/crisp

1 t – Chives, chopped
- Baguette for dipping
Directions
- Preheat oven to 400 degrees.
- Let the butter soften at room temperature.
- Place the bones on a foil lined tray and then season with SPG. Place in the oven and roast for 20-25 minutes until the marrow starts to bubble slightly.
- At the same time, toss the garlic cloves in oil and then wrap in foil. Place in the oven to roast for 35-45 minutes or until fragrant and tender.
- Allow the bones and garlic to cool at room temperature.
- Season the steak with SPG and sear to your desired temperature. Rest the steak while you make the butter.
- Scrape out the bone marrow and place in a food processor. Pulse until smooth and then add the butter.
- Mix until well incorporated.
- On a large cutting board, spread the marrow butter out about ¼” thick, covering about ¾ of the board.
- Thinly slice the steak.
- Season the butter with King Shallot and then top with the chili crisp, roasted garlic cloves, steak and garnish with chopped chives.
- Serve with a baguette for dipping and enjoy!
