This Mock Chicken Seasoning adds flavor and texture to your ground pork and veal without the addition of MSG. Perfect for making mock chicken legs.

    How To Use

    (For 12-1/2# Batches Divide Following By 1/2)

    You will need:

    25# of Ground Pork or Veal (or mixture)

    12 oz. Cold Water

    1 pkg. of No. 542 Mock Chicken Seasoning or 541 Mock Chicken Seasoning

    Breadcrumbs

    Suggested Procedure:

    Combine ground meat, cold water, and Mock Chicken Seasoning in a mixer or large tub. Mix 3–5 minutes, or until meat becomes tacky. Portion into 5 oz. patties and shape as desired (no wider than 1-1/2”). Roll each portion in breadcrumbs and place on a parchment-lined tray. Bake at 325°F until internal temperature reaches 155°F.
