Shepherd's Pie Egg Rolls

Ingredients

  • 1 LB – Ground Beef
  • 3 TB – Prime Time Butcher’s Blend
  • ¼ Cup – Diced Onion
  • ¼ Cup – Diced Carrot
  • 1 TB – Minced Garlic
  • ½ Cup – Red Wine
  • ½ Cup – Peas
  • 2 Cup – Mashed Potatoes
  • 12 – Spring Roll Wraps
  • 1 – Egg

Directions

  1. In a large skillet, brown off the ground beef over medium high heat.
  2. Once fully cooked strain off excess grease and set the meat aside.
  3. Sauté the carrots and onion for 5-6 minutes until translucent. Add garlic and cook additional 2 minutes, stirring often.
  4. Add in the ground beef and season generously with Prime Time Butcher’s Blend.
  5. Add peas and red wine. Cook until the wine is mostly evaporated.
  6. Remove from heat and allow to cool fully.
  7. Beat the egg in a small bowl.
  8. Place 3 TB of mashed potatoes in the center of a spring roll wrap and spread to 3”X4”.
  9. Place 3 TB of the meat mixture on top of the mashed potatoes and spread to cover the potatoes.
  10. Brush the edges of the wrap with egg wash and then roll the egg roll up.
  11. Take the corner closest to you and fold in over the filling, pulling back slightly to condense the contents.
  12. Bring in the sides and then finish rolling away from you.
  13. Preheat fryer to 350 degrees.
  14. Fry the egg rolls for 5-6 minutes or until hot and crispy brown.
  15. Cool 3-4 minutes and enjoy!
