The one thing that can make a grilled cheese better? Smoky and spicy Notorious P.I.G. pulled pork and a P.I.G.-infused butter.
Ingredients

⅓ C - Butter, unsalted, softened

1 T - Notorious P.I.G. Rub

8 slices - Texas-style bread
-
12 slices - White cheddar cheese, sliced

½ C - Cheddar Jack cheese, shredded

2 cups - Notorious P.I.G. pulled pork, warm

½ C - Caramelized onion
Directions
In a small bowl, combine the softened butter with Notorious P.I.G. Rub. Brush on the outside of Texas-style bread and place, butter-side down, on a sheet tray for assembly.
Set one slice of cheese on 4 pieces of bread, then ½ cup pulled pork, shredded cheese, sliced cheese, 2 tablespoons of caramelized onion, remaining cheese slices, and 4 pieces of bread.
Heat a large skillet over medium-low heat and toast either side of the sandwich, 2 to 3 minutes per side, until golden with cheese melted.
Cut diagonally and serve warm.
