You won't be-LEAF how tasty and easy this Farmhouse Frittata is. Filled with eggs, asparagus, spinach and parmesan cheese, this frittata is perfect for a healthy breakfast or dinner.

|1 1/2 tsp||Farm House Veggie Blend, divided|
|1 tsp||Olive Oil|
|1/2 cup||Scallions, sliced thinly|
|1 cup||Asparagus, sliced thinly|
|2 cups||Spinach, fresh, chopped|
|1/3 cup||Parmesan, shredded|
|1 tsp||Italian Parsley|
- Preheat oven to 400° F.
- In a mixing bowl, whisk together eggs, milk, and 1 teaspoon of Farm House. Set aside.
- Heat butter and oil In a small cast iron skillet, over medium heat. Sauté scallions and asparagus for 2 minutes, then add spinach and ½ teaspoon Farm House and sauté another minute.
- Pour egg mixture over vegetables, and gently stir with rubber spatula. Add parmesan cheese and stir to incorporate. Top with parsley and bake 16 to 18 minutes.
- Remove from oven, cool 5 minutes, then slice and serve.
