Ingredients
- ½ LB – Bacon, Thick Cut

2 TB – Churro Dust
- 2 Cup – Self Rising Flour
- 2 Cup – Cornmeal
- 4 tsp – Baking Powder

3 TB – Churro Dust
- 1 ½ Cup – Buttermilk
- 2/3 Cup – Water
- 4 – Eggs (beaten)
- 1 Cup - Corn
- 2 ½ Sticks – Butter
- ½ Cup – Honey

2 TB – Churro Dust
Directions
- Preheat your oven to 350 degrees.
- Lay the bacon out on a rack lined tray and place in the oven to bake for 25 minutes.
- Remove the bacon from the oven and season with Churro Dust.
- Return to the oven until the bacon is cooked to your liking. (10-20 minutes depending)
- Remove from the oven and let the candied bacon rest while you make the fritters.
- Combine the self-rising flour, cornmeal, baking powder and 3 TB of churro dust and mix.
- Add in the buttermilk, water, and beaten eggs. Whisk until well incorporated. Fold in the corn.
- Heat a skillet or flattop to medium/high heat.
- Melt 1 TB of butter in the skillet and the pour out the fritters in ¼ cup portions.
- Cook for 4 minutes and flip. Cook additional 3-4 minutes until cooked through.
- Repeat the process with the remaining batter
- In a small sauce pan, melt 2 sticks of butter.
- Once melted whisk in the honey and 2 TB of Churro Dust until smooth.
- Plate the fritters with chopped candied bacon and a drizzle of Churro honey butter.
- Enjoy!
