Just keep swimming! This Citrus Smash Shrimp Skewer from under the sea is quite the catch. Brighten up your grilling with a wave of citrus.
32 Pieces 16/20 Sized Shrimp- Peeled and De-Veined
2 Medium Zucchini
2 Medium Yellow Squash
2 Bell Pepper (any color)
1 Red Onion
2 T Citrus Smash Lemon Pepper
2 T Olive Oil
Cut he vegetables into medium-large pieces. About the same size as the shrimp. Skewer the shrimp and vegetables in alternating order starting and ending with shrimp.
Drizzle with olive oil and generously season with Citrus Smash seasoning. Rub the oil and seasoning into the skewers.
On a high temperature grill, cook the skewers 3-5 minutes each side or until the shrimp is fully cooked.
Serve with sesame rice or just more sautéed veggies! You can also drizzle with a little Thai Fighter sauce.
Tip: Use Metal Skewers, If using Bamboo Skewers soak in water for 15 minutes before assembling to keep from burning while grilling.
