Butter Blizzard Twice Baked Potatoes

Warm up with our Butter Blizzard Twice-Baked Potatoes, where fluffy potatoes meet the creamy, garlic-infused richness of our Limited Time Butter Blizzard Garlic Butter Rub.
Ingredients
- 8 – Baker Potatoes (large)
- 1 TB – Cooking Oil
- 1 Cup – Heavy Cream
- 2/3 Cup – Sour Cream
- 1 Cup – Shredded Cheddar Cheese
- ¼ Cup – Chives, minced

3 TB – Butter Blizzard Garlic Butter Rub
- ½ Cup – Shredded cheddar Cheese (for final melt)
- Minced Chives – For Garnish
Directions
- Preheat your oven to 375 degrees.
- Wash your potatoes and then drizzle with Cooking oil. Rub the oil into the potatoes and then place on a baking tray.
- Bake the potatoes for 60-75 minutes until tender all the way through.
- Remove from the oven and rest 10 minutes.
- Use a sharp knife and cut out the top section of the potato, about 1” from the top.
- Discard the tops or save for potato skins!
- Scoop out the insides of the potato and place in a mixer. Repeat with the remaining potatoes.
- Save the potato shells.
- Attach the whisk attachment to the mixer and start on low/medium to start mashing the potatoes.
- Add cream, sour cream and the Butter Blizzard Garlic Butter Seasoning.
- Mix until smooth and well incorporated. Add 1 cup cheese and chives.
- Mix again until just incorporated.
- Scoop the mashed potatoes into a piping bag and pipe back into the potato shells.
- Place the stuffed potatoes back on a baking tray and then into the oven again for 25-30 minutes until heated through.
- Top with more shredded cheese and return to the oven to melt.
- Remove from the oven and rest for 10 minutes before topping with butter tabs and chives for garnish.

Attach a whisk attachment to the mixer and mash the potato filling on low/medium speed. 9. Add heavy cream, sour cream, and the Butter Blizzard Garlic Butter Rub for rich, garlicky flavor. 10. Mix until smooth and well combined, then fold in 1 cup of shredded cheddar cheese and chives. 11. Scoop the mixture into a piping bag and fill the potato shells with the mashed mixture. 12. Place the filled potatoes back on a baking tray and bake again for 25-30 minutes until thoroughly heated. 13. Top with additional shredded cheddar cheese and return to the oven to melt. 14. Once out of the oven, let the twice-baked potatoes rest for 10 minutes before garnishing with minced chives. 15.
