Put your sea legs on! It's been said that you can wrap anything in bacon to make it better, so we did just that! Bacon Covered Lobster paired with a smooth buttery dipping sauce that will knock you off your feet!
Ingredients

8 Oz – Lobster meat

12 slices – Bacon
-
¾ C – Champagne
-
1 Stick – butter
-
1 t – King Shallot - Black Garlic
-
1 t – Lemon Juice
-
1 t – Parsley, Chopped

Pinch – Chile Flakes
Directions
Preheat oven to 375 degrees.
Lay bacon on a rack lined sheet tray and bake for 15-18 minutes or until about 75% cooked.
Remove from oven and allow to cool until you can handle the bacon.
Cut the lobster into ¾ oz pieces.
Wrap each piece of lobster in a piece of par-cooked bacon and secure with a toothpick.
Place the pieces back on the tray and put back in the oven for 8-10 minutes until the lobster is cooked and the bacon is slightly crispy.
Make the dipping sauce by reducing the champagne in a saucepot over medium heat by 50%
Add butter, stirring constantly until fully melted.
Add remaining ingredients.
Serve the lobster bites with a side of the dipping sauce and enjoy!
