Ingredients

Crust:
2 Cups Graham Cracker Crumbs

1/4 Cup Light Brown Sugar

1 t Apple Pie Cinnamon Spice Rub

6 T Butter- Melted

Cheesecake Filling:
12 Oz Cream Cheese - Softened

1/2 Cup Sugar
-
1 1/2 t Vanilla
-
2 T All- Purpose Flour
-
1 Egg
-
Crumble Topping:
1/2 Cup All-Purpose Flour
-
1/2 Cup Light Brown Sugar
-
1/2 Cup Quick Oats
-
1 t Apple Pie Cinnamon Spice Rub

1/2 t Cinnamon
-
1/4 Cup Butter
-
Apple Filling:
3 Medium Apples- Peel and Cube
-
1 T Butter- Melted
-
1/4 Cup Light Brown Sugar

1 t Apple Pie Cinnamon Spice Rub

1 T Lemon Juice
-
1 1/2 t Corn Starch

1/2 Cup Water
Directions
Preheat oven to 350 degrees F
Grease spring from cheesecake pan with butter
In a medium bowl mix graham cracker crumbs, sugar, butter and Apple Pie Rub until combined
Firmly press graham mixture into pan and on the walls of the pan
Bake for 8 minutes and set aside to cool
In a medium bowl add cream cheese, sugar, vanilla and flour. Beat for 2-3 minutes until smooth and then add egg and lightly beat for up to 60 seconds. Set aside
In a medium bowl, add flour, oats, PS Apple Pie Rub, cinnamon and butter and mix until combined and forms into crumbles. Set aside.
In a medium sauce pan on medium/low heat add apples, butter, sugar, Apple Pie Rub, cinnamon, lemon juice, corn starch and water. Slowly stir for about 10 minutes until mix thickens and to prevent burning. Set aside to cool for 5-10 minutes, or place in a bowl and put in fridge until ready to use.
In pie crust spoon in cheesecake filling and gently press to the edges.
Add apple filling to cheesecake and press topping to the edges of crust.
Top with pie crumble and bake for 30-35 minutes. If top begins to brown to quickly cover loosely with foil for remaining time
Cool cheese cake for 30 minutes and place in the fridge until ready to serve
Top with caramel sauce, whipped cream, and a scoop of ice cream
