  1. Remove the chuck roast from the fridge and let it sit at room temperature while the smoker preheats.
  2. Preheat smoker to 250 degrees.
  3. Cut the chuck roast into 2” cubes and slather the pieces with Bier Hall mustard.
  4. Season the cubes generously with Rodeo Rub and then let them rest for 20 minutes to allow the seasoning to adhere.
  5. Place the meat directly on the smoker and smoke for 2-3 hours.
  6. Combine the Cherry Bomb BBQ sauce and butter in a small saucepot and heat until the butter is melted, stir to combine.
  7. Once the seasoning is well tacked to the meat, place the meat in an aluminum pan.
  8. Pour in the sauce and stir gently to cover the meat in sauce.
  9. Cover the pan with foil and place back on the smoker.
  10. Cook for an additional 4-5 hours until the meat is fork tender.
  11. Remove the pan from the smoker and peel back a corner of the foil to vent. Rest for 20 minutes.
  12. Serve and enjoy!
