Ingredients

2 T Citrus Smash Lemon Pepper

1 Red Bell Pepper- Julienned

2 T Capers

1/2 Pint Cherry Tomatoes- Halved

1/2 Red Onion- Julienned

1/2 Lemon- Slices

1 Stick Butter- Unsalted
Directions
Set oven to 400 degrees. Clean and cut the cod into 4 separate portions and set aside.
Cut the vegetables and set aside.
Take a piece of parchment paper and set the cut vegetables and capers in a small pile in the middle of the sheet. Top with a portion of cod. Season the cod with Citrus Smash seasoning. Lay the lemon slices on top on the cod and finally top with butter.
Take another sheet of parchment paper and cover the cod and vegetables. Tucking and folding the paper together with the bottom sheet. This will not be airtight, but it should create a good seal where juices and steam will not be able to escape easily.
Set the portions on sheet trays, you should be able to fit 2 per sheet.
Place in the oven and cook for 30-40 minutes. The parchment should have a slight brown color to it and you will see a little bit of steam escaping the sides.
Carefully, cut a little slit in the top of the parchment paper and then tear to open the pouch. Be careful with this process as the rest of the steam will escape at this point.
Place the whole pouch on a plate and serve with a starch or your choice.
