Ingredients

3 lbs Pork Belly

1 Cup – Apple Pie Rub

1 Stick – Butter
-
1 ½ Cup – Maple Bourbon Wing Sauce
Directions
Preheat smoker to 250° F
Butterfly the pork belly lengthwise then season generously with Apple Pie Rub.
Roll the pork up from one end to the other and then use 6 skewers to hold it together.
Slice between each of the skewers to create individual pinwheels.
Season the pork with more Apple Pie Rub and then place them directly on the smoker.
Smoke for 3-4 hours until the outside has started to caramelize a little and the seasoning is well tacked to the meat.
Place the rolls in an aluminum pan, add tabs of butter and a generous drizzle of Maple Bourbon Wing sauce.
Cover with foil and place back on the smoker for 2-3 hours until tender.
At this point you can rest the meat for 15 minutes and enjoy, or you could sear the rolls on a flattop or griddle for even more caramelization.
